Knock-off version of Longhorn’s Parmesan Crusted Chicken

Knock-off version of Longhorn’s Parmesan Crusted Chicken

Four servings.


Cut two chicken breasts lengthwise, so you end up with four. Place them in a ziplock bag and mix and pour on this marinade:

Marinade

1/2 cup ranch dressing

Juice from half a lemon

1/2 cup olive oil

3 Tablespoons Worcestershire sauce

2 Tablespoons fresh minced garlic

Cajun seasoning

Black pepper

After the chicken has marinaded at least two hours, remove from marinade and discard the marinade.

Heat up olive oil and sear the chicken until lightly brown on both sides, about 3-4 minutes on each side. 

Place the cooked chicken on a rimmed baking sheet. 

Mix this cheese sauce and warm in the microwave for 30 seconds until blended. Top the cooked chicken. And broil for 3 minutes until bubbly. 

Sauce:

1 cup shredded Italian cheese blend

1/4 cup Ranch dressing

2 teaspoons Cajun seasoning

1 teaspoon black pepper

Remove from oven. Now mix the breadcrumb topping and add to top of the sauced chicken.

Breadcrumb mix:

5 Tablespoons Melted butter

2 teaspoons Cajun seasoning

3/4 cups Panko breadcrumbs 

Place back under under broiler until lightly brown; about 2-3 minutes. Watch carefully!
